Day 8-14


Day 8-14



Wow so I have missed a few post.....opps, life's been a bit busy but good news I'm still eating vegan :)



Quick recap of the last few days I’ve had a soy frappe( mmm good) a veggie pizza at pizza hut( thin crust no cheese) which was pretty good. I’ve had a lot of nuts some Nutra bars and some delicious cocoa rice crisp cereal. Oww I also tried coconut milk ice-cream which was really good. I think that’s about it, I haven’t had any smoothies lately but I might make one for dinner tonightJ

Day 7


Day 7

Sunday

Today I had coca cereal for breakfast with soy milk.

For lunch I had a veggie sub from subway (Italian bread, lettuce, cucumbers, pickles, spinach, and a little bit of onions)

Granola bar for a snack , some fruits and coca almonds

The other half of the sub for dinner, and strawberry lemonade ( organic)

Day 6

Today I had coca cereal mmmm, for breakfast

At work I had a few soy nuggets for lunch ( which were actually really good!)

For snacks I had fruit and a granola bar at a bridal shower and I went out with a friend to Starbucks and had a vanilla soy Frappuccino( delicious)

For dinner I had more soy nuggets and half a veggie smoothie( I made this one with watermelon rinds and fruit and spinach) I made some for mom and dad too:)

And some soy pecan ice-cream for desert mmmmm

Day 5


Day 5

Today I had oatmeal again because it was so yummy the day before but this time I had les oatmeal and added a slice of Ezekiel bread with pho butter.

Lunch included fruit, garlic spinach hummus, sweet potato chips, and  for snacks some crackers  and a fruit/ nut chewy granola bar.

For dinner I ended up going to Panera with my future mother in law for a bible study and I had a fruit poppy seed salad with no chicken and a green tea/lemonade.

After dinner I went to Kroger and broke down and bought some soy chicken, on the Vegan websites that I’ve been reading they recommend making the Vegan transition easier on yourself with substitutes. So even though I’m not a fan of fake meat, I’ll try a little bit, and I have to admit it kind of sounds good. I also purchased some rice cakes though I had to be careful to read the labels ( for cheese and milk) I also got some coca almonds and for a delicious treat a pint of soy ice-cream, which I’ve had a ½ cup and it is pretty delicious.

Day 4


Day 4

Today I had oatmeal for breakfast ( cooked in almond milk) it was delicious and I even put some maple syrup in it, which was the most sugary substance I’ve had in the last four days.

For lunch, at work I snacked on nuts, a verity of fruit, and some crackers.

After work I went to Kroger and purchased some watermelon slices, a coworker told me about mixing watermelon grinds in your smoothies, and I want to try it next time I make a green one( which will probably be tomorrow) I also bought some fruit snacks, nut and berry granola bars.

 Kenny wanted to get barbeque pizza tonight and he was really upset that I wasn’t going to be eating with him, so I thought that I would make a veggie pizza but then found this really cool vegan pizza in the health food aisle at Kroger. It was actually incredibly good; it had garlic tomato sauce on it and onions and mushrooms on the top. Kenny tried a piece and Greg( My future brother in law) actually ended up eating three pieces.

Overall I’m feeling full, and healthy.

Day 3


Vegan for a Month


Day 3


So today I felt like a rabbit but I also feel really healthy.....maybe that’s why they can sprint so fast.......

Anyway, for breakfast and snacks I ate fruit: Watermelon, strawberries, grapes, apples

For lunch I had half of a Chipotle veggie burrito bowl…no beans and some nuts for snacks

For dinner I made a green smoothie and it was actually quite delicious, I used baby bananas, half of an Odwalla fruit smoothie drink, a cup of spinach, lemon juice, ice, and ginger for taste.  Mom and dad both tried it and they agreed you can’t really taste the spinach.

Day 2


Vegan For a Month

Day 2
Going good,no cheese mess ups today, had crackers and peanut butter for brekfast. Ment Kenny( my Fiancée ) for lunch and had half of a chipotle veggi borritio bowl, which was surprisingly good.

I went to my two year old niece’s mermaid themed birthday party. She was adorable in purple and I got lots of hugs and kisses, so precious. My sister tempted me with barbeque grilled chicken, volunteering me to be the taste tester, I declined…..whhhew, I avoided the shrimp, side passed the cake and ice-cream and even choose a healthy drink( but then I haven’t been drinking pop/soda for two years.) So what ended up on my plate? Watermelon, some noodle mix and more watermelon…mmmm…..

After the party my mom and I stopped at grocery store, and I browsed the health food section, my lucky day I found soy yogurt( yogurt is like my most favorite thing ever and I wasn’t sure how I could go without it for a month) I bought 6 containers though I have yet to try it, keep your fingers crossed!

Day 1

Vegan for 1 Month

Day 1-

So Monday August, 6th I decided to go Vegan...........
                                                                          ............for a month. As one of my co-workers explained to another this means that I'm not eating anything that came from something with eyes or has a mother and as another co-woker helpully pointed out that roles out humans from my diet....really? bummer........

So Monday started out a little rough, I bought a salad from the local grocery store picked off all the chicken,feeling pretty proud of myself and healthy, I ate half of it only to realise I forgot to take the cheese off, which comes from something with eyes and a mother...oppps.... oh well what I can do but keep going......
